My must haves:
Bijii Plates - replacement name plates. Makes healing and focus targeting much much better by giving great visibility
Interrupter- adds a giant bar when an interrupterable ability is being cast by an enemy. Helps queue you to interrupt - since interrupting is EVERYONE'S responsibility this helps prompt healers and DPS who aren't so inclined to pay attention
JunkIt - Auto sells junk loot. Yes please.
Potato UI - alternative unit frames. Highly recommend you at least check this out
My UI misc addons:
Better Combat Text - Anything that improves the terrible default text in the game is a winner
Better Quest Log - the default quest log is a monster, it's way too big. This helps with that
Commodity Stats - Gives graphs, etc of historical prices for commodities on the market. I dont have any great feelings about this one yet, it hasn't been working for me ;P
Galaxy Library - Allows you to view the models of all items in the game
Galaxy Meter - DPS meter. Helps optimize your rotations, etc. I'm not usually a huge parser guy but with this combat system I find its a huge motivator to optimize
Grid - Just added this - but its the standard healer frame that shows all health bars in a grid. I imagine as a healer this will end up as an essential
IconLoot - highlights what you've looted
LocalTime - adds the local time to your lower bar
NavMate - keeps a nav arrow to your current objective on the screen. Hasn't been working lately sadly
RestXPReminder - if you go to log out not in your house it reminds you to teleport home.
SCastBar - Alternative cast bar
SpaceStash - alternative bag UI. Just downloaded, more thoughts to come.

I will second Biji Plates. It's kinda surprising how much better than they are than the default name plates. The standard ones are surprisingly bad.
Biji plates and potato UI are awesome, I noticed grid and i remember a very similar addon, also called grid, for WOW, and I wonder if it is made by the same person O.o??? But RJO, awesome list, I will have to check more of those out.
I'm definitely going to use your list as a reference for my addons. I think I will wait until beta is over to see the final result of the UI before I change anything around.
I'm a fan of minimalism, if anyone finds and good ones to cut down the clutter please let me know. Very excited to see grid here.

Classic Quest Dialog - makes the quest chat and rewards look more like WoW but i found that it was a little easier for me to see and read and understand.
I need to give that one a run. I kinda of like how slick the take on quest dialogue is in the default UI. The problem is I think it's so frictionless that you get tempted to skip dialogue, etc and miss out on the story.
Putting it in a weighty window like this might get me to pay more attention and I really do want that.
Bijii plates was interesting until I realized that it displayed them 100% of the time, regardless of if you were targeting something or not. Made everything look like a nightmare field of meters.
